From Sea to Table: How We Source Our Sustainable Seafood

You cannot cook your way out of mediocre fish. That is why the most important work we do happens before anything hits the stove — in the choosing.

Quality you can taste

Our various seafood selections come from large and flourishing bodies of water. We look for fish that arrives firm, bright and smelling of clean ocean, and we build the menu around what is at its best rather than forcing a dish out of season. When the fish is right, our job in the kitchen becomes simple: do not get in its way.

Why sustainability is not optional

A restaurant that depends on the sea has every reason to protect it. Sourcing responsibly — favouring species that are well-managed and avoiding those under pressure — is how we make sure there is still a flourishing body of water to fish from years from now. It is stewardship, but it is also self-interest: healthy waters make better fish.

We want the water we cook from to still be flourishing long after tonight's service.

Seasonality drives the menu

Because we cook with the seasons, our menu breathes. A fish that is perfect in spring may step aside in autumn for something better suited to the moment. This keeps the food exciting and lets us stay flexible — if the day's catch tells us something different, we listen.

Respecting the whole ingredient

Sourcing well also means wasting little. Trims and bones become stock; every part that can be used, is. It is the same instinct that runs through Caribbean home cooking, where nothing good is ever thrown away.

From our hands to your table

By the time a plate reaches you, it has passed through a chain of small, deliberate decisions — what to buy, when to serve it, how to treat it. You taste the result as freshness and clarity of flavour. We think of it as respect: for the ingredient, for the water, and for the people we are feeding.
